New Mexican food is different from what we traditionally know as 'Mexican food.' The NM style doesn't utilize cheese inside of, on top of, and smothering everything. Instead, they use... green (or red) chile sauce. Trust me on this one- you even have green chile on your hamburger. Below was a delicious and spicy green chile stew.
